Omega Nutrition, Organic Coconut Oil and Organic Virgin Coconut Oil, page two

When I mention using or eating coconut oil today, I don't get the funny looks I got a few years ago. Many people are learning the truth about the real health benefits of quality, organic coconut oil and organic virgin coconut oil.

This is due in part to people like Dr. Bruce Fife, N.D who wrote the book; "The Healing Miracles Of Coconut Oil". In it, he states that he uses coconut oil himself and it has helped him with problems he has had for many years. He has seen it help chronic psoriasis, eliminate dandruff, speed recovery from the flu, stop bladder infections, overcome chronic fatigue, help clear up peptic ulcers, hepatitis C, and genital herpes. 

How is this possible? Look at the facts involved in the history of tropical oil. Not to many years ago, coconut oil was used in almost exclusively in every type of process or baked food. Then came the story that coconut oil was responsible for such things as heart disease. The powers that be said; "We need a product that would eliminate this problem". What about soy? It's plentiful and inexpensive. 

How so? There are plenty of large farm operations is the U.S.A. where thousands of acres of corn are grown. These farms have to rotate their crops to replace the nitrogen in the soil when they produce a crop of corn. To do this, they plant soybeans. Planting the soybeans helps replace the nitrogen in the soil so it can produce another good crop of corn. Result, the farmers have a large soy crop. Who can find a market for this crop? The American Soy Association. They work to develop a market for the product. What a perfect fit. 

Coconut oil and coconut products are out of the picture because they are said to be unhealthy. Who made this claim. The American Soy Association. Soy steps in and few people question its health benefits. Another consideration is the fact that the coconut industry is not organized as well nor do they have the money to mount an advertising campaign equal to the one produced by the ASA. 

It's important to note that most of the coconut harvested in the world comes from small farmers who own an average of three hectares of land. Much of this coconut is harvested by hand. Good, natural coconut oil is still produced without chemicals, etc.. This is the coconut oil Dr. Fife speaks of when he talks about its healing properties.

Triglycerides

Here is another word we hear a lot about today. The doctor may say, "Your triglycerides are high." What are triglycerides? It takes three individual fat molecules joined together by a glycerol molecule to make a single triglyceride molecule. What is interesting is fact that both the marble fat on a steak and the corn oil you may have in your cabinet contain triglycerides/fat. Saturated fat is a triglyceride; so is polyunsaturated fat. The fat in coconut oil contains triglycerides and it is still able to help the body heal. 

Now lets look at some of the different types of fat on the market today. Soy Bean Oil contains 15 per cent saturated fat, 24 per cent monounsaturated fat, and 61 per cent polyunsaturated fat. Corn oil contains 13 per cent saturated fat, 25 per cent monounsaturated fat, and 62 per cent polyunsaturated fat. Canola oil contains 6 per cent saturated fat, 62 per cent monounsaturated fat, and 32 per cent polyunsaturated fat. Coconut oil contains 92 per cent saturated fat, 6 per cent monounsaturated fat, and 2 per cent polyunsaturated fat. 

So what does all this mean? Which fat is best for the body? Which fat is not light sensitive? Which fat will withstand the highest temperature for cooking? You guessed it! Coconut oil. Coconut oil is not light sensitive because of it's high percentage of saturated fat. It will also withstand the most heat, its flash point is 400ºF/204.4ºC. Other oils are great for seasoning if they are processed without heat and packaged in light proof containers. Otherwise these oils are in various stages of becoming rancid. There is no way you can tell by looking at them or smelling them to know this. The truth is any monounsaturated fat or polyunsaturated fat that is exposed to light and heat is rancid and may contain harmful trans-fatty acids.

Coconut oil it a medium chain fatty acid (MCFA). One of the reasons it is so effective in helping the body is its unique ability to help strengthen the immune system. MCFA's are antibacterial, antifungal, antiviral, and antiparasitic. Unlike many drugs on the market today, they have no harmful side effects. 

In 1966 Dr. Jon J. Kabara, a professor of pharmacology and researcher at Michigan State University, reported on the antimicrobial activity of lauric acid.
